腌芥菜是我家冬天必备的咸菜,暖暖的喝碗粥配上它真的是一种温暖的小幸福。每家都有自己喜欢的做法,而今天的这款做法,是我最常用的。简单,用料少,还原了食材原本的味道。

用料
芥菜 适量
红辣椒 适量
精盐 适量
白醋 适量
八角 几颗
花椒粒 适量

1、洗净的芥菜,切丝。

2、一定要用锋利的刀,否则很难切的。

3、洗净的小米椒。

4、去蒂,切丝。也可以放整个,只是切了食用时更方便哦。

5、白醋两袋,入锅,开火。加入精盐,八角,花椒粒儿。

6、醋烧开后倒入辣椒。

7、倒入切好的芥菜丝,继续加热并翻拌均匀,直到芥菜稍微变软出水,关火。

8、装坛。最后连调料水也倒进坛子,这样芥菜更容易入味。

9、晾凉。

10、盖上盖子。随吃随取适量,拌上食用油,就是最佳的配粥小菜了,冬天里的温暖。

小贴士

精盐不能太少,比平时拌菜的量稍微多点,这样更有利于存放。坛子也要提前洗净晾干,不能有水渍。北方的冬天,存放在温度低的地方即可,不用进冰箱。
